I am a first time builder of an Annapolis Wherry. I am about to assemble the Piantedosi rowing wing and I am wondering if anyone could tell me the recommended pitch setting on the gate for the Annapolis Wherry?

That will depend on a number of factors - I'm presuming you mean stern pitch? Best to get it installed, get yourself a spirit level or digital level box and see what they recommend for your oars in the first instance, try it out and adjust as needed once you've had a chance to get the feel of it. It moves very differently to a fine shell.
