At the point where I have to decide on the sail configuration. I am not a very experienced sailor.
The first guy to build it went with 2, Terry from CLC says 3 are better!

I have owned both yawl and lug yawl boats. The (3 sail) yawl version will give likely yield better performance but will be more complicated to sail. It also gives you more sail configuration options but the stayed rig will take longer to set up. The lug yawl rig is simpler with fewer controls, and will be quicker to set up and take down. Since the Autumn Leaves will never be a race boat and you are a novice, the simpler lug rig is probably worth marginally less performance. I have been sailing for half a century and would go with the lug if building for myself.
My other suggestion is to take some sailing lessons while completing your build. Sailing is a complicated skill that is not something you can learn by watching YouTube. A few hours with a good teacher will be time well spent.
