Peeler seams

Hello all. I've just put the fiberglass tape down on the seams of my peeler and covered them with epoxy. I'm not sure of how many layers to put down and when  to sand? The manual seems to go straight to putting the tank sides in after glossing the seams. 

Any my advice is appreciated. Thanks.

1 layer of glass tape unless the manual says otherwise. You can sand either after the epoxy has completely cured or when you are finishing the boat. What's glossing? Haven't seen that term before.
