The bottom skids in my kit are 1and 1/2 inch wide.
The manual states 1 inch wide skids.
Does it matter?

I did not specify for the Peeler Skiff kit.
The skids are for bottom hull.

I doubt it will matter at all. If anything it may improve how the skids hold up over time as there's 50% more surface area to bear the wear they'll see in use. That 50% doesn't come at the expense of wetted hull area either, you'd see the same exposure whether the skid are 1/2" wide or the as-supplied 1-1/2" pieces.
Remember these kits are updated with the experience of prior builders dictating improvements. The manuals may not get updated to reflect what are minor 'adjustments' such as what you've described.
Could even be a typo that missed getting corrected.
